Instant Lime pickle

Lime Pickle is a “must have” accompaniments to any Indian meal. Nimbu ka achaar, is a popular dish served in India and is delicious when homemade. We love lime pickle for its hot, sour, salty. Chillies and spices makes it fiery, tangy, and crazy-flavorful. This recipe is simple and easy without the ferment process. Lime pickle can be served over a variety of foods including rice or lentils. These pickles are believed to aid digestion when eaten in small quantities.

Ingredients

Ingrediens

3 lime

1 tbsp mustard

½ tbsp fenugreek seeds

1½ red chilli powder

½ tbsp salt

For tempering

1½ tbsp sesame oil

½ tsp mustard

1/4 tsp asafoetida

Procedure
  • take 2 cup water and get a boil.
  • once the water comes to a boil, drop in 3 lime.
  • cover and rest for 5 minutes or until lime softens.
  • now take off the lime from water and pat dry.
  • chop into quarter pieces and keep aside.
  • in a pan dry roast mustard and fenugreek on low flame until it turns aromatic.
  • blend to a fine powder and add to chopped limes.
  • also, add red chilli powder, turmeric and salt.
  • mix well making sure everything is well combined.
  • further heat 2 tbsp oil and add mustard and  hing for tempering.
  • splutter the tempering and allow the oil to cool completely.
  • once the oil cools completely, pour over the pickle and mix well.
