A simple and most flavorful homemade Thai red curry with nutritious ingredients you will ever make in 40 minutes. A simple meal for all ages and a dinner to delight the palate. The best thing about this recipe is that you can replace pork with other meat. Jasmine rice could also be substituted with other healthy grains. Whatever substitution you make, the sauce here is to die for. It’s the creamy and peanut buttery sauce that heats the flavor. Anytime a home cooked meal is better at taste and cheaper!!
Ingredients
1 tbsp olive oil
400g pork tenderloin, sliced
4 tbsp Thai red curry paste
4 tbsp peanut butter
2 stalks spring onions , sliced
400ml can light coconut milk
1 tbsp soy sauce
5 pieces of thin sliced fresh ginger
1 fresh red chilli
salt - if required
juice 1 lime
3 dl jasmine rice
½ of each red and green bell pepper
bunch of parsley leaves
Procedure
- Heat the olive oil in a large wok pan or saute pan. Add the spring onions, ginger and chillies and cook for 1 min. Add the pork slices and cook for 5 mins until starting to brown.
- Stir in the curry paste and peanut butter. After 30 secs, add soy and coconut milk, plus ½ can of water. Add the bell peppers. Mix well, put a lid on and leave to simmer for 15 mins, stirring occasionally.
- Stir in the lime juice and check the seasoning. Serve scattered with the parsley leaves and rice.
