


This simple baked one tray dish is simple to make it on a weeknight or a weekend. We love seafood and prepare it at least 3 times a week. Fishes like salmon, trout, mackerel, cod, shrimps (shellfish) is our favourites here at home. There is no better food than fish and vegetables, cause its healthy and easy to prepare. This dish prepared by my daughter (12 years ) with the help of me. Should say fish dishes are good for learning purposes for kids too. Not too many ingredients and quick cooking time.
Pesto on the other hand is a hands on experience, replacing some ingredients from the original recipe. Due to allergy and intolerance reasons, choose to avoid nuts and cheese. Yet combining these fresh herbs with olive oil is yummy and nutritious.
I prefer using mostly organic food products and home grown herbs. Nothing can beat natural food products.
Ingredients
Baked trout steaks
Trouts - 4
All rounder spise - 1 tsp
Cayenne - 1 tsp
Olive oil - 1 tsp
Home-made pesto
Basil - handful
Rosemary - 2 stalks
Garlic - 1 cloves
Thyme - 3 stalks
Coriander - handful
Olive oil - 5 to 6 tbsp
Salt - 1/2 tsp
Procedure
Serves – 4
Baked trouts with cauliflower and broccoli
Preheat the oven – 180∘
Season the 4 trout steaks in a baking dish with all rounder powder, cayenne and olive oil and set aside.
Season the broccoli and cauliflower florets with the same spice powders and olive oil in a baking dish.
Place the 4 steaks on the vegetables and cover with foil.
Bake it covered around 10 minutes. Take away the foil and further bake it for another 10 minutes.
Homemade pesto
Combine all the ingredients to pesto in a blender and blend it to a fine semi liquid paste.
Mix it with the cooked spaghetti and let it rest for 2 minutes before serving .
