Spicy beef liver

 

 

This spicy beef liver recipe is piping hot from spices and easy to prepare. Jalapeno and liver will take you on a culinary adventure and explore the senses of this nutritional benefited meal!!

Behind this nutritious recipe is a story from my childhood. Liver in general is disliked for its taste and consistency. However ingredients like onion, garlic and spices pip up the flavor which makes it delicious. Back in my days liver was served once a while but often. Watched my mom prepare liver with Indian spices and black pepper which I prefered to use in this recipe. Beef liver is available in supermarkets / local butchers  and will definitely recommend for its nutritious benefits like iron and vitamins. Being raised up in India, craving for spicy foods is just in our blood. I pick jalapenos which is merely mild to moderate in terms of the Scoville scale and accounts for many health benefits in this recipe. Rounding off this dish with yoghurt to balance the spice heat. This delicious dish goes perfect with organic brown rice. Yummy!!

 

Ingredients

Spicy beef liver

beef liver -350 gms

onions - 2 medium sized

Jalapeno - 1

garlic - 6 cloves

Olive oil - 2 tbsp

ghee - 1 tbsp

milk - 300 ml

Spices for marination

turmeric - ½ tsp

sambar powder - ½ tsp

garlic and ginger powder - ½ tsp

salt - 1 tsp

black pepper powder - ½ tsp

Procedure
  • Slice the liver (elongated or cubes) and soak them in a bowl of milk for 30 minutes. (soaking helps in removing the bitter flavor from the liver.
  • Pat the liver dry and marinate with the spices (turmeric, sambar powder, black pepper powder, salt, ginger and garlic powder)
  • Let it rest in a room temperature while preparing the remaining ingredients.
  • Slice 2 medium onions and jalapenos  and  peel 6 cloves of garlic.
  • Over a medium high heat, add ½ of ghee and ½ of olive oil in a saute pan. Add marinated liver pieces and fry for 5 minutes (browning process). Take the liver pieces from the pan og set aside.
  • Add the remaining ghee and oil in the pan. Add sliced onions, garlic cloves and jalapenos and stir fry for 3 to 5 minutes. Add the browned liver, salt and mix well with the caramelized onions.
  • Cook covered for 30 minutes in a medium low heat or until the liver is completely cooked.
  • Garnish with chopped coriander  leaves.
